Dill seeds originate from Central Asia. Today, they are also cultivated extensively in Egypt, Mediterranean countries, and parts of Eastern Europe. In recent years, their popularity has been increasing in North America. A related variety called Sowa is grown in India; its seeds are larger but less aromatic.India and Pakistan are the leading producers of dill, while countries like Egypt, Fiji, Mexico, the Netherlands, the United States, England, and Hungary contribute smaller quantities to global production.Dill is an annual herb native to Central Asia, but it is also widely grown across Europe and North Africa for both culinary and medicinal purposes. Dill weed—the dried leaves of the plant—is used as a seasoning and has a milder flavor compared to dill seeds.

Uses
  • Fresh and dried dill leaves (sometimes called “dill weed” to distinguish it from dill seed) are used as herbs, mainly in Sweden, the Baltic, in Russia, and in central Asia.
  • Dill seed is used as a spice, with a flavor somewhat similar to caraway but also resembling that of fresh or dried dill weed.
  • Dill seeds were traditionally used to soothe the stomach after meals. Dill oil can be extracted from the leaves, stems and seeds of the plant.
